I have been eating gluten free for almost a month and i have been eating alot of gluten free baked goods. Today i got really gassy and kinda nauseated and i noticed that the things i were eating all had xanthun gum. What can happen if one eats too much of the xanthun gum or guar gum. Im still pretty new at this so any help is great?

And those are his favorite muffin...I have a gluten free baking mix ...these are the ingredients in that
*Brown Rice Flour, White Rice Flour, Cultured Buttermilk, Natural Almond Meal, Tapioca Starch, Sweet Rice Flour, Potato Starch, Grainless & Aluminum Free Baking Powder (Sodium Bicarbonate, Sodium Acid Pyrophosphate, Potato Starch), Baking Soda, Sea Salt, Xanthan Gum*
and here is the recipe for the muffins
1 1/3 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/3 teaspoon salt
2/3 cup oil
2 eggs
1 1/4 teaspoons vanilla extract
1 1/3 cups grated peeled apples (about 1 large apple)
1/3 cup raisins
1/3 cup flaked coconut
1/3 cup shredded carrots
What do you think will happen if i replace the all purpose flour and baking soda with the gluten free baking mix from above and just make everything else as it says in the recipe.....any suggestions? do you think this will be disaster??
I want to use a family recipe to bake a cake for my friends birthday but she is really allergic to gluten. Can I use the same recipe but instead use rice flour or do I have to change the amount?
I've heard how this diet can be beneficial to autistic children and I was wondering how I might be able to incorporate it at home.
I bake and make most of my meals from scratch but most recipes call for all purpose white flour and milk, what can I use instead? Obtaining different flours is difficult where I'm at right now but is there any way I might make it myself as well? I'll take any suggestion you're willing to offer!
